2021 forester 50/50 tires recommendation

Hello everybody.
I have 2021 forester xs, tire size is - 225/60r17.
I bought the car a while ago, and installed underbody protection. Now i want to take it up a notch And change my highway tires to 50/50 in the goal to better my off-road capability, but without to much damage for gas mileage and highway comfort.

I did my research and found the usual suspect (yokohama, falken, and more..) but would love to have some more insight.
Thank you!
