Need help figuring out what I need for a system

So, I am planning on starting to build a DIY system to read pH and nutrient levels, the reasoning I'm looking for help here is because this system needs to read seven different towers and I have some ideas but I want others opinions on how I should go about doing this, mainly need parts listing and timeframes to give to my bosses.
