Need ideas for quail eggs, sirloin tip roast and various chiles

Went to the farmers market today. Found several good things. Came home with a sirloin tip roast, poblano Anaheim and jalapeño peppers, and quail eggs. Looking for some inspiration as far as what to make. I have to eat gluten free but no other restrictions. I have an electric smoker. What would you make?
