Would Val Gene’s restaurants hold up to the competition today?

I spent a lot of time in Shorty Small’s and Texanna Red’s in the 90s. I remember them being very good. But, there’s a lot of competition now. I’m feeling nostalgic for some of the restaurants we had 30+ years ago. Harry Bears, The Varsity, Split T, Applewood’s…🤤. It’s quite possible that they would not hold up to the options. We have today though. What are your thoughts?
