Taking my daughter for her 21st birthday, looking for suggestions on an itinerary for Oct 17-20th?

So my wife and I havent been to vegas in about 4 years now, we have taken both kids to vegas once before when she was 16 and my son was 13 and did the grand canyon, route 66, magic shows, circus circus rides, art district and Hells Kitchen Dinner.

Both kids are foodies, and we have always told them both that when they turn 21 we will take them for their birthday. Fast forward to this year, she turns 21 and he will be 17 at the time of the trip. She is big into halloween, we plan to take her to Zak Bagans house as well as area 51 for the Omega Mart and Universals Halloween Horror Nights. Fremont street is on the list as well as maybe the high roller. We want her to have a great time but we also need to make sure the 17 year old is engaged in some activities as well.

I havent seen any reviews on Universals Halloween Horror nights but my wife and I have been to Zak Bagans house prior and it was pretty cool. We fly in around noon on the 17th and fly out on Tuesday around 4pm so we are looking for some of the cool stuff to take them to, want to check out 1 buffet while we are here, hit the pool, shows, etc.
