Suggestion for building a StanbyME alternative

Discussion

My wife has been bugging me to get a stanbyme for the longest time. Her friend bought some knockoff that is supposedly a 32" 4K display. I bought the StanbyME and was disappointed with how cheap it looked and my wife wanted a bigger display, so we returned the it and I bought the LG Swing, which is a 32" 4K display. The UI is a bit slow, but then I saw the whole thing about spyware and I'm like f this! I bought a knock off KTC Megapad, which uses Android and all I have to say is I hate the cheap display and the OS is super slow. Then I thought I might as well assemble something similar from parts. We have an unused apple TV from before we met, though now I'm discovering that I have a gen 1 4K Apple TV, which only sometimes outputs 4k in youtube videos... So get a portable VESA monitor stand on wheels, some display (I think some 32" monitors use a 40mm x 40mm VESA mount and bigger displays use something not as elegant), and an Apple TV. Thoughts? Equipment recommendations? TIA!
