Question about Paranoia

Hello, to give some background, my partner was diagnosed with schizoaffective disorder years before I met her. She keeps having adverse symptoms to meds, and she started tampering off of them and claims how she feels much better and how the meds were actually harming her. She used to be very pro medication, and now she's the opposite. She's been telling me her therapist and primary doctor were talking about whether she has been misdiagnosed with schizoaffective since she has a handful of other things going on with her, like adhd, autism, synesthesia, etc. but technically, she still has the diagnosis. Since stopping her meds, she's been quite more logical and analytical. Finding patterns in so many different little ways and it's starting to negatively impact me because it started off with being suspicious of the water in the house. And weirdly enough, we started having water issues, where the main line broke and issues with water pressure for the week. They fixed it, and as she's still concerned about the water, she's been fixated on several other things, jumping from one thing to the next, and to be honest, it's not all illogical stuff. It all stems from multiple observations and patterns she's seen, but it's to the point where she thinks I'm sick, she's sick, and all our animals are getting sick. It doesn't help that we moved into a new home within the last year, and I've been having chronic pain from an injury that hasnt yet healed. My dog has been having some health issues, too, so it's really hard to just ignore what she's saying because what if she's right? It all seems very coincidental to me, but we can't even conversate or joke like we used to. It's all about her observations and patterns, and I feel like I'm losing my mind because I have no one to talk to about this. I don't want to dismiss what she's saying, but I can't keep up, and I'm so exhausted. She keeps saying this is the real her, and she was sicker on meds she was forced to take because people don't like the things she says. I don't want her to make her feel unsafe. It's hard to say she's going through paranoia when her thought process kind of makes sense but also doesn't at the same time to me since they seem quite exaggerated. But she is fixated on so many different things, and it's like it never stops. To me, it doesn't seem like she is happy, but who am I to say that when I'm not her. I'm just so lost on what to do at this point when my mental state is getting even worse dealing with all this alone
