Final paper!

Thanks to @Danyeaman, I've finally settled on my final paper: Canson Infinity Baryta Photographique II Satin 310 GSM.

No lamination—I'll just use my die cutter and place the prints directly into the sleeve. Clean, simple, and exactly the finish I was looking for.
