Advice for first character ever

I'm playing for the first time ever. I'm level 60 phantasmal blade blademaster. I feel relatively strong but still in normal mode.

I've got all of the dlc. I'm toward the end of AoM. Since I've never played all the way through it seems like I should do FG and FoA but I'm going to be close to max level. I know elite/ultimate mode is like NG+ but it seems like most recommendations migrate there before max level.

Is there general advice to know when to reset into the higher modes? Is it reversible? Can I try elite and go back to normal? Should I just go ahead and playthrough all content on normal first?
