Clockwise from top left: Chicken bone broth, rawa fried prawns, prawns and egg-drop hooman curry, kaddu raita, koshimbir salad, aloo - simla mirch sabzi, and brown rice!

To lower glycemic load:

1. Begin with bone broth.

2. Finish salad (inspired by the Italians! There's a reason why 'antipastos' are served before standard Italian meals - same principle - slow down blood glucose absorption rates. 😄)

3. Then enjoy the rest of the meal!

4. Post-meal 5-10 minute walk! Fin. 😎

Recipe tweaks to lower glycemic load:

1. Add acid!! Kokum to hooman (or tamarind, raw green mango, vinegar, bimbli, or just about anything sour), add lemon squeezed to salad (or vinegar), and amchur to aloo - simla mirch sabzi.

2. Make hooman thick!! As thick as possible - I do this by adding a tiny portion of tofu when blending the coconut paste. Why tofu? Tofu blends well in the curry paste, is a rich protein source (always good to have protein to increase satiety and slower digestion!), and doesn't change the texture or taste of the hooman at all. None of my clients can tell the difference between tofu-blended hooman and normal hooman (and I cannot either LoL 😂)

3. All colors on the plate!! This won't directly reduce glycemic load but increases micro-nutrient absorption! And so, always lovely to have multiple colors.

4. Brown rice is better than white rice! As is widely already known!

Meal Mischief Factor: (coz I'm mentally a 2 year old, lol 😂)

For koshimbir salad - I used a Bahn-Mi inspired salad dressing. Lemon + vinegar + jaggery syrup (very tiny portion) + chaat masala! Absolute flavor bomb! 😍
