Shapton Pro 1000 good for a chef knife? Hoping to only buy one whetstone.

A few days ago I ordered the Shapton Pro 1000 (I think), because based on some research around here and on r/sharpening, it seemed like the go to all rounder to sharpen chef knives. But all of a sudden today I started seeing people talk about the RockStar 500 as the new go to all rounder. This thing seemingly came out of nowhere, and now I'm second guessing my purchase. I'm completely new to sharpening, I'm just looking for something that's simple and easy to learn.
