Recommendations for a Day in Vitoria-Gasteiz?

Hi there! I'm traveling across Northern Spain with my mom for the next two weeks, and I'm so excited! We're going to Vitoria-Gasteiz for about a day and a half and was wondering if anyone had any recommendations for food, drink, activities? We're already planning on checking out the Santa Maria Cathedral, the Plaza de La Virgen Blanca, and the Centro Memorial de las Victimas del Terrorismo. I was considering booking a wine tour or something like that because it'll actually be my mom's birthday when we're in town. Thanks so much in advance!
