Relapsed MTG player wants to play Dredge but not sure in which format

Hi! I have played MTG in the past, mostly Standard and Pauper in MTG Arena, but quit right after Throne of Eldraine set.

I want to get back into the game and I like graveyard manipulation strategies in most card games that I have played in the past (Yu-gi-oh and Cardfight Vanguard), and saw that MTG has graveyard strategies but mostly played in eternal formats and saw videos of Dredge decks in MTGO.

I was wondering which format should play and how much do Dredge deck lists differ across different eternal formats? For example, if I were to play Manaless Dredge in Legacy, would that same deck list in Legacy be good in Modern and vice versa?
