Parmesan like you get in the glass shake bottles at good restaurants

Was out in Providence recently, very nice Italian place, and they had those classic shaker jars of parm on the table. You know, that fluffy version of the cheese that's also really pungent and so damn good. Is that perhaps a mix with romano or other cheese? If it's straight up parm where do I get it and in that fluffy form? :-)
