easy chicken pot pie filling and/or chicken and dumplings recipe? crock pot friendly prefered

im looking for an easy chicken pot pie filling or chicken and dumplings recipe. ideally one for throwing stuff in a crock pot for later. I know I could just use a normal recipe and use substitutions but they often call for cream of chicken soup and I don't want to have to make a whole recipe just to make an ingredient for another recipe. I was thinking, could coconut cream and some chicken bullion do the trick well enough? or does anyone have a good dairy free chicken pot pie filling recipe or chicken and dumplings recipe?
