3 year old frustrated with overnight pull ups

My 3 year old (June birthday) was pretty easily potty trained in December. I knew from talking to a lot of people and doing research that overnight was a difference beast. At one point a few months ago she was waking up for about four days straight asking to pee at night and I thought it was time, but that stopped.

Every night she asks to wear her regular underwear because the pull up is "bunchy" and "itchy." I tried switching brands and sizes but it comes down to her just not liking the feeling of the diaper which I understand. So we talk about how once she doesn't need to go pee overnight she can wear regular underwear. She's a pretty bright kid and its frustrating to her that she doesn't understand why she pees because she doesn't WANT to. At this point I estimate she is she only going once overnight from the weight of the pull up. She stops liquids at 7pm and pees before bed at 830/9.

Anyone go through this? Any advice?
