Why do people release pods out of order?

I pretty much just listen to comedians' podcasts, and very often they'll be referencing bits/conversations that they already recorded but haven't released yet.

They even acknowledge it while its happening, saying things like "oh the audience has no idea what we're talking about because thats a from a future episode."

I can't for the life of me figure out why you'd choose to do things this way
