Notification troubles

I’ve had my series 11 for a couple weeks now and I’m trying to sort out the notifications on it. I hate receiving so many notifications on my watch as it disrupts my day. I’ve gone in and toggled off the mirroring for apps that don’t have the drop down customization but I’m still receiving notifications from these apps. Even apps that I have turned off completely in my phone that I have mirrored on the watch still come through the watch.

Is this because I have my watch unlocked while on my wrist? Do I need to turn off notifications on my phone, unmirror, and then turn them back on my phone to stop them from sending to the watch?

I’m not sure what I’m doing wrong here and any tips would be very helpful.
