Japan trip: Knife purchase recommendations

Hello folks,

We have our first trip to Japan coming up in October and it’s non-negotiable that I’ll bring home one or more knives.
Therefore I’m looking for your recommendations for where to look. Here some key points:
- travel area will be Osaka, Kyoto, Tokyo, Hakone
- preferably direct purchase from maker but also fine to buy from a store
- targeting Gyuto but would pick up Nakiri, Petty, or Honesuki as a bonus
- budget 300-500 EUR
