Cheap, quick and easy vegan meal options
The YouTube channel "Cheap Lazy Vegan" has a lot of recipes that make meal prep quick and easy. I have always been lazy in the kitchen, even before I went vegan. When I am in a hurry, I can heat a can of soup, or even quicker, I can chop off a chunk of tofu, add soy sauce and maybe nutritional yeast and enjoy it without even heating it in the microwave. Tofu with black salt, nutritional yeast and maybe pepper tastes just like egg whites! Cold is like hard boiled, and warmed in the microwave it is more like scrambled eggs.
I can get out a piece of pita bread and eat it with hummus along with fruit, nuts, seeds, etc. Frozen veggies can be eaten after heating in the microwave.
Usually, I have a big salad, pasta, beans, rice, instant potatoes, and miso soup. Tempeh is almost as quick and easy, but not as appealing when eaten raw. I often crumble it and add some vegan compatible Worcestershire sauce or soy sauce and then heat it in the microwave.
The Instant Pot, air fryer and the microwave is what I use 90% of the time when I do cook or heat and eat. We do make a big batch of 100% whole wheat pasta and keep it in the refrigerator (stored in water) to heat up. That makes meal prep quicker and easier, and healthier, since it becomes resistant starch. We eat a lot of Trader Joe's frozen Veggie Fried Rice since it is just a heat and eat option.
I stock up on shelf stable heat and eat type products when they are on sale, and even buy frozen entrees when they go on sale.
