kay jewlers fraud?

can i send a demand letter to kay jewelers for signing me up for their credit card without my consent? as well as request money to settle the dispute while stating if it isn't settled a lawsuit may be filed? this wouldn't be extortion or coertion would it? if not would there be any other reason as to doing this would not be in my best interest?

Location: this happened in Oklahoma however I do not reside in that state.
