Almost ordered takeout, then I remembered I had a couple of chicken breasts in the fridge that needed to be used up. It was already past six, the kids were circling the kitchen asking what was for dinner, and I just wanted something that felt a little fancy without actually being complicated. I had some prosciutto leftover from a charcuterie thing we did over the weekend and honestly the whole idea came together pretty fast from there. Wrote down everything I did here in case anyone wants it: [https://www.amgroyal.com/air-fryer-prosciutto-wrapped-chicken](https://www.amgroyal.com/air-fryer-prosciutto-wrapped-chicken)

Here is what I used:

2 chicken breasts
4 slices prosciutto
4 slices mozzarella cheese
salt and pepper

Here is how it went:

1. Cut a little pocket into the side of each chicken breast. I was a bit nervous about this part because I always feel like I am going to cut straight through, but just go slow and it is fine.
2. Stuff the mozzarella slices into the pockets, then seal them up as tight as you can.
3. Sprinkle with a little salt and pepper for flavour.
4. Wrap each breast with slices of prosciutto and make sure you cover that pocket opening so the cheese does not escape while it is cooking.
5. Pop the chicken into the air fryer, spray with a little oil, and cook at 200 degrees for 15 to 20 minutes depending on how thick your chicken is.
6. When you pull it out, pour those pan juices over the top before serving. Do not skip this, it makes a real difference.

A few things I noticed:

The crispy prosciutto on the outside was honestly the best part. It kind of crisps up like bacon and adds this salty bite that goes really well against the melted cheese inside. I was not expecting that texture contrast to be so good but it totally was.

Fair warning, check your chicken around the 15 minute mark if your breasts are on the smaller side. Mine were pretty average and 18 minutes was the sweet spot. I left one in a touch too long and it was still fine but just slightly less juicy than the other one.

The mozzarella does ooze out a little no matter how well you seal it, that is just the reality. It ends up sort of caramelised on the outside of the chicken which is actually delicious, so do not stress about it.

Leftovers the next day were surprisingly good. I just reheated in the air fryer for a few minutes and the prosciutto crisped back up again which I was not expecting at all.

This has officially entered the weeknight dinner rotation in our house because it is genuinely one of those air fryer chicken recipes that feels way more impressive than the effort involved. Family dinner sorted in under 30 minutes which honestly never happens around here.

What do you guys usually serve alongside something like this? I just did a simple salad but I feel like it could use something more substantial on the side.
