Becoming an undergrad researcher

So im an incoming first year (pre-med track) and really want to become an undergrad researcher in my first year at uva. Ive been cold emailing and was hoping to officially start working at one within my first month at uva (ik it sounds dumb, but I really want to start racking up research hours for med school applications as soon as possible, especially bc I dont want to do a gap year)

I got a response today from a lab im really interested in, and the pi offered to set up a meeting/interview in early October (because she'll be out throughout september).

Should I accept this offer or should I keep cold emailing? It doesnt start as soon as I'd like, but ig it doesnt matter that much...

Im more so concerned about how likely I am to actually get a position in the lab. Does having a meeting with the pi usually guarantee getting a position in the lab? Or is it just like any other job interview where youre likely to get ghosted after being interviewed?

Ik thats a lot, but I just want to know whether to end my search for a research position because I got offered a meeting with the pi, or should I keep cold emailing so I have backups
