Why do new sets feel so bad and when did it start?

After a very long time away I've gotten back into building/collecting sets again. I've noticed on my last 4 builds that they feel off and have some build parts I am not a fan of. Ashokas interceptor and the arc 170 have gaps. Ashokas shows the astromech under the wing and the 170 shows the cockpit. The tie bomber canopy is covered so you can't even see the minifig inside. Which is very annoying since the same canopy is used in ashokas interceptor and you can see through it. Albeit they added an additional brick to the front that cuts off a good bit of it that in my opinion is not necessary. And the stud shooters are just horrible. I took them off Obi-Wans starfighter because they just looked so out of place. It also had a place for the body of the astromech despite it being an integrated mech, but no place to store the radio dish.

The sets look ok and feel a lot sturdier than before, but why are they designed so meh at best?
