Playing with people

I was wondering how can I play this game with other people (other than ones I know irl). I know there are official servers and community servers, but what do those exactly mean? The official servers as far as I saw get a reset every once in a while so I don't see the point of investing time in such a world. And what about the community servers, are those created by specific groups for them to play or are they joinable or what? Lmk how you use the multiplayer features of the game and how have you found other people to play this with.
