Dialing in Bigfoot espresso [Niche Zero grinder, Gemilai Owl]

Hello,

I finally took the dive to get my set up. I'm dialing in my first bag and struggling a bit. I finally pulled a decent one but it feels like I'm grinding it way too coarse for what's recommended. I have it set to 22 on my Niche grinder, anything under 20 setting and the water can't push through the puck. I've attempted tamping gentler but that didn't seem to be the issue. I've played with the auto-pull to pre-wet for 2s and infuse for 5 and it pulls for 32s total. Not sure anymore what else I should adjust but it seems like each adjustment either makes it way bitter or way sour and nothing in between.
