PREP TIME: 30 minutes COOK TIME: 25 minutes SERVINGS: 4 DIFFICULTY: Medium
INGREDIENTS:
For the Bulgogi-Style Chicken:
- 1 lb (450g) boneless, skinless chicken thighs, thinly sliced
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 1 tbsp brown sugar
- 1 tbsp mirin (or dry sherry)
For the Kimchi Corn Cakes:
- 1 cup fine cornmeal
- 1/2 cup all-purpose flour
- 1 large egg
- 3/4 cup whole milk (or buttermilk for extra tang)
- 1 tsp baking powder
- 1/2 cup finely chopped kimchi, squeezed dry
- 2 tbsp green onions, chopped (white and light green parts)
- 1/2 tsp granulated sugar
- 1/2 tsp salt
- 1/2 cup vegetable oil, for frying (plus more if needed)
For the Gochujang Lime Crema:
- 2 tbsp gochujang (Korean chili paste)
- 1/4 cup sour cream (or plain Greek yogurt for a lighter option)
- 1 tbsp fresh lime juice
- 1 tsp honey
For Garnish:
- 1 tbsp toasted sesame seeds
- 2 tbsp fresh cilantro or extra green onions, chopped
INSTRUCTIONS:
- Marinate the Chicken: In a medium bowl, combine the sliced chicken thighs with soy sauce, sesame oil, minced garlic, grated ginger, brown sugar, and mirin. Mix well to coat the chicken evenly. Cover and refrigerate for at least 15 minutes, or up to 30 minutes while you prepare other components.
- Prepare the Gochujang Lime Crema: In a small bowl, whisk together the gochujang, sour cream, lime juice, and honey until smooth. Taste and adjust sweetness or spice if desired. Cover and refrigerate until ready to serve.
- Make the Kimchi Corn Cake Batter: In a large bowl, whisk together the cornmeal, flour, baking powder, sugar, and salt. In a separate bowl, whisk the egg and milk. Pour the wet ingredients into the dry ingredients and mix until just combined (do not overmix; a few lumps are fine). Fold in the finely chopped, squeezed kimchi and green onions.
- Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook, stirring frequently, for 5-7 minutes, or until the chicken is fully cooked through and slightly caramelized. Remove from the skillet and set aside.
- Cook the Corn Cakes: Carefully wipe out the skillet if needed. Add 1/2 cup of vegetable oil and heat over medium heat until shimmering (around 350°F / 175°C). Drop the corn cake batter by 1/4 cupfuls into the hot oil, flattening slightly with the back of a spoon if desired. Cook for 3-4 minutes per side, or until golden brown and cooked through. Work in batches to avoid overcrowding the pan, adding more oil if necessary. Transfer cooked corn cakes to a wire rack lined with paper towels to drain excess oil.
- Assemble and Serve: Arrange 2-3 kimchi corn cakes on each serving plate. Top generously with the cooked bulgogi-style chicken. Drizzle with the Gochujang Lime Crema. Garnish with toasted sesame seeds and fresh cilantro or green onions. Serve immediately.
TIPS:
- Squeeze the Kimchi: Ensure your kimchi is thoroughly squeezed dry before adding it to the corn cake batter. This prevents the cakes from becoming soggy and helps them crisp up beautifully.
- Don't Overcrowd the Pan: Cooking the corn cakes in batches ensures even browning and prevents the oil temperature from dropping too much, which can lead to greasy cakes.
- Adjust Spice Level: For a milder crema, reduce the amount of gochujang. For extra heat, add a pinch of gochugaru (Korean chili flakes) to the chicken marinade or crema.
