Recommendations for three weeks in SE Asia in Jan/Feb? Mix of chubby and other quality hotels

Give me your recommendations for about three weeks in SE Asia. Good weather, mix of cities and beach/ quiet, maximum five different locations, probably max three countries. Some chubby hotels, some reasonably priced local luxury hotels . Love great food ( both local hole in the wall and high end, fine dining), history, culture, stunning natural beauty, interesting villages, lively cities, mellow calm beaches , snorkeling a plus, not too tacky or overcrowded or dirty. Probably connect via Hong Kong, so that will be one of the locations / countries. Thailand plus Vietnam? Thailand plus Bali? Thailand plus Cambodia? Give me your thoughts.
