Looking for my forever all-rounder

Like the title says, looking for a great all-rounder with a preference for japanese style as I recently got into them and am in love. Kitchen professional for over 25 years, though currently only cooking at home.

Price point is below $500, but if there is something a bit above that makes sense I'm down.

Favorite styles are Santoku and Gyoto. I love the look of Bunka's but have read that they have a very flat profile and I am still not adept at Chinese/Japanese style cutting techniques though I am working on it.

Preference for edge retention and food release as well.

Tend to prefer shorter knives (7-8 inch has always been most comfortable for me)
