Returning player from Version 2.5. What should I know?

I started playing Genshin back in 2020 but stopped around Version 2.5. I just reinstalled it after so long and, surprisingly, I'm excited to get back into it.

What major changes should I expect, and is there anything I should prioritize or avoid doing as a returning player? Please spare me the spoilers.
