For those that worked on tallships for any length of time what was it like?

I’d love to someday work for a time on a tallship. But unfortunately I have terrible food allergies that make me too nervous to travel, especially internationally or away from medical facilities:( though I plan to at least take day trips like on the windy at some point.

Would love to hear about others experiences though!
