Winging it in Uzbekistan

So I might be getting old but I'm nostalgic for those old pre-smartphone days when we didn't have everything planned and you make it up as you go along. We are a couple in our 40s with a 2yo, heading to Uzbekistan for 2 weeks in October. We have our flight tickets and I thought about booking accommodation just for the first place we fly into (Samarkand) and then making up the rest as we go. No reservations. Is that insane? Keen to hear from anyone who has been to Uzbekistan recently esp with a toddler. TIA!
