My firecider is suddenly carbonated
I made this year's batch of firecider roughly 2 weeks ago.
Pretty standard recipe. Lemons, oranges, onions, ginger, garlic, peppers, tumeric, horseradish, and apple cider vinegar with the mother. I have not yet added honey.
Gave her a shake and a taste today and was shocked to find that she has carbonated.
My understanding is that firecider is closer to a pickle than a true fermentation which is why im so confused on how this happened. Ive never been able to carbonate a vinegar base before.
No weird smells or taste. Visually she looks fine. Shes just fizzy.
Do I need to toss it?
