Limits on spine/choil rounding and grail use?
Hey everyone!
Longtime lurker, first time poster. I'm curious about a couple things and wanted to hear people's thoughts. Both of my questions obviously depend on personal preference but I'm still curious.
What are your limits on rounding/polishing a spine and choil or heel?
Do you prefer to keep the knife exactly as the maker intended and would never do it? Only on knives that have actual sharp edges, or does everything unpolished get the sandpaper?
Second, any thoughts on actually using "grails"? Everyone has their own definition of grail but I'm imagining things like the Konosuke Kaiju, many of the Togashi Honyaki knives, or any number of Takada-san's pieces (you get the idea).
Are you someone who thinks that every knife is made to be used or do you think some knives are pieces of art and should stay that way?
Also, do any of you who have talked to more craftsmen know what some of them think or once it's out of the workshop do they generally stop worrying about it?
I'm personally willing to polish cheaper knives from less well known craftsmen as long as it's something I'm sure I'll keep and use and have no intention of selling. As for grails, I have a few that are "grails" for me and my budget but none of them are super rare and have been used, though I am a little more careful and thorough with maintenance.
No right or wrong answers and I recognize that it often depends on the actual knife, I'd love to hear your thoughts.
Thanks!
