How can I remotely manage a mac (and have it load remote storage)

I'm looking to setup a MDD G4 DP mac for young kids with old games and educational apps, then setup Launcher (or something similar) to make it easy to open apps.

I also want to build, test, and manage it through SheepSaver on my PC (for convenience).

Should I setup an AppleTalk share and connect the two machines?

I envision the software library will be hosted and managed on the Sheep saver instance and access remotely via the mac.
