Trying to learn the business side of HVAC, what actually makes running a shop harder than it should be?

I'm a recent software engineering grad looking to get into this industry, and I'd rather understand how shops actually run before I assume anything about it.

So for owners: what's the part of running the business that gives you the most trouble? And for techs: what does the office side make you deal with that shouldn't be that hard?
