Spain and Portugal Route Suggestions

I'm in the very early stage of planning a month-long bikepacking trip in Spain and (possibly) Portugal next year. I've never been to either country, so I'd like to explore different areas over the course of the trip (one route that stretches across different areas, or two 2-week long routes, or three week-long routes).

I'll be riding a gravel bike with 2.1" tires with a carrying capacity for about 4-5 days worth of food, and I average between 75-100km, 1000-1500m per day.
