New player advice

Completely new to souls games. Decided I would take the plunge I followed a guide to get the meteor staff and rock sling. But I don't want to cheese the dragon to level up super fast I want to play the game.

What's a good way to farm runes without cheesing stuff? Locations caves mini bosses etc? Tia
