The "recruiter" was *very* eager to hire me... which just resulted in the worst hiring process I've experienced yet

I (23M) just graduated with bachelors in physics, and unsurprisingly, spent the last couple months getting ghosted and rejection emails. Desperate for even temporary jobs no matter the pay, I came across my country's top university's website that promotes a bunch of research assistant roles. I applied to a few of them in July, one of which did replied soon after, but unfortunately it required me to study Master's at the uni for 2 years, and I'm not ready to make that commitment yet.

Fast forward to last week, suddenly I got a reply from different one. To clarify, I "applied" by expressing my interest and sending my CV to the research organiser's email listed under each RA post. The organiser for this one asked if I was still interested in the role, and since I had no other options, especially when this one does not require me to do Master's, I said yes.

That being said, I also told her that I wish to have further information about the role first (the description on the uni website is very barebone), to which she asked if we can meet next week (which was this week). She also told me to apply directly through the uni website, and at this point, I simply assumed that that is simply the proper channel to do it, and she would explain everything when we meet *online* later. A twist of fate happened, however, because I suddenly got an invitation for an interview from a company I applied to 2.5 weeks ago. Said interview just happened this morning (which I think went pretty well. Wish me luck).

The problem, occured yesterday because the research organiser suddenly told me I'm ALREADY HIRED and asked if we can meet IN-PERSON the NEXT DAY. Mind you, that would require me several hours to travel to a different state, and she didn't even seem to know where I'm currently living in. So I told her that's impossible and if we can do it online, to which she said yes. Unfortunately, the time she suggested clashed with the interview, so I asked if we could do it in the evening instead (I didn't tell her about the interview). Instead of answering my question, however, she asked "are you working rn?" Feeling quite fed up by that point, I told her that I would explain everything if we do that online meet-up tomorrow evening, but once again, instead of answering, she simply said "ok I'll hold off the hiring. Let me discuss with my research team," like, h**ave you not discussed with them BEFORE hiring a rando within a single week?

Finally, just now... I got a new message from her saying that she is not hiring an RA anymore. Honestly? I think I just dodged a bullet. I can say for certain that she's not a scammer, but if she was this disorganised at hiring someone, I imagine working under her would be worse. No interviews, no job explanation, no contract to be signed, no whatever. Just suddenly telling me that my work has officially began on the day it did. She did told me she wants me to start working immediately, but who tf would expect that she meant "by next week"? Not even taking into account the fact that I gotta find a new place to live and transportation since again, living with my parents in a different state right now.
