Struggling to gain weight

Advice

Hello everyone!

I recently started transitioning towards veganism. Not fully there as I'm slowly figuring out what's best for my diet (plus visiting my mother now and then makes it difficult as she wouldn't accommodate me food-wise). I'm writing this here so that I can get advice within a vegan diet.

I've always struggled with gaining weight, and though I eat a lot (big nutritious portions and snacks), I keep on losing weight. I make sure to eat lots of legumes so as to get the carbs from them (chickpeas, lentils, black beans, fava beans, what have you) and use a variety of nutritious oils in my cooking, primarily sunflower oil, coconut oil (for rice) and unrefined palm (I eat a lot of west african food).

I know avocado and coconut would be great for weight gain. I use coconut a lot for curries and soups, and I'm trying to get more avocado.

I think one of my big issues is that I don't really like junk food. While rich in calories, it's not really essential, plus most junk food brands are really evil.

I've been on a gluten free diet for the last 4-5 years and only started having gluten a few months ago, so I was hoping to gain weight from that, but if anything, I feel like I've lost weight since then.

Any advice on calorie-rich vegan foods?
