The barn volcan azul bitter

Anyone having luck with this one as filter coffee? I only get quite bitter “dark roast” flavours. Doing double bloom one final pour, total time 2:30 and 90c (tried hotter first but was worse). Should I try even lower temp? Longer total time? Or is this more suited for aeropress? (I don’t have an espresso mashine).
