what X-Men comics should I read?

Hi, I want to start reading X-Men comics because of X-Men '97 but I dont want to really start from THE complete beginning, I do want a to start from A complete beginning if you understand. I want the origin of the X-Men and then read the pheonix saga and everything but i dont want to read everything from 1963 until now. I heard there is something like the 2000 Ultimate Spiderman (1620) (it may be called ultimate X-Men) and its a complete reboot, is it good? Can I read it and know about the X-Men or is it not "canon". Should I read something else?

Sorry if my question doesnt make sense I am new to this and need help.
