How do you organize your notes when studying from long YouTube lectures?

I spend hours every week watching tutorial videos and lectures on YouTube. My main issue is that my screen gets messy with too many open windows, and switching between a Google Doc and the video completely ruins my focus.

I recently started using a simple side-panel note app to keep everything in one tab, which helped me a lot.

How do you guys manage your notes while watching long videos? Do you use a specific workflow or split screen setup? (If anyone wants to try the tool I'm using, just ask and I can share it).
