Testing Advice

General Discussion

Hi all,

My husband and I have been making a relish recipe for a few years that hasn't been tested as far as I can tell. It was the first recipe we ever tried with canning and I have learned so much since this recipe. The issue is - this is our favorite recipe. We have tried ones from NCHFP etc and nothing compares.

I am going to send out my relish to UMaine for testing. It costs $160. My question here is - can anyone give me any advice on this recipe that is a dead giveaway for it to fail testing? I want to reduce resubmission as much as possible as I am not made of money ๐Ÿ˜… any advice welcome!!

I am also put in contact with my state food safety rep - she just hasn't answered my emails ๐Ÿ˜…
