Can’t cook for one person.

Food & Cooking 🍳

Hi, I’m 24f and moved out of my parent’s house last year and had two roommates. I need to preface this by saying I absolutely hate leftovers. The only leftovers I can eat without wanting to throw up is pizza. Cooking worked out really well for me when I had roommates because I would just give them whatever leftovers I had from dinner and didn’t worry about food waste. Now, though, I live alone and have for two months, but I absolutely cannot figure out this cooking situation. I have the refrigerator of a college frat boy (beer, cheese, some condiments, milk that’s a week past its expiration date, and half a pound of frozen ground beef).

I’ve been struggling with cooking because I was only ever taught how to make food for 3-5 people and can’t seem to get the portions on anything right for one person. I don’t want to keep living off of boxed Mac n cheese or frozen pizza, I’m desperately craving healthy and tasty meals that aren’t going to leave me with leftovers that will just sit in my fridge until they go rancid.

Shopping for one person has also been driving me a bit crazy. I DON’T need a giant jar of pasta sauce but can’t find anything smaller. I’ve just gotten frustrated and discouraged and am feeling like shit with all the junk I’ve been eating.

Does anyone have any hearty single serving meal recommendations or resources I can use to figure out how to cook for one? I know a lot of people seem to love meal prepping but I genuinely get nauseous when I think about eating any leftovers.
