Breakfast tacos (not burritos) in PDX?

I lived in Austin for twelve years and besides Matt's BBQ tacos, I can't reliably find quick, affordable, counter service breakfast tacos in Portland. One of the obvious reasons is that it's not standard Mexican food (it's tex-mex).

Pepper Box Cafe used to have decent ones, too (RIP)

I've found that some food carts / puestos will have them but they close, or stop making them.

Any hot tips?
