How tf do people find caves in survival worlds?

So ok granted it's a bit of a silly question but I've really been struggling lately

for the first time in ages I've started a purely survival world and wanted to take it less seriously and just enjoy the experience of the game so no farms or exploits and I've even been avoiding enchantments bc it makes the game to easy imo

which has been really really fun, if I want something I either grow it or find it myself which has meant I've explored a lot more of the world than I usually do

but the one thing that always comes up is a chronic lack of resources and it's driving me insane

I feel like all I do lately is mine and mine and mine and have little to show for it and it's really stalled my progress☹️
