whats todays definitive way to play?

I have decided to replay this game before GTA 6 and i wonder whats the best way to play it nowadays? I have heard the they fixed the most issues with the Definitive Editions but i can imagine the originals still holds up the best.

I own the delisted steam version, a german 2.0 DVD copy, OG Xbox and the definitive Edition on Switch (have Swtich 2) and PS5.
