Difficult Professor

Long story short I have a difficult professor. She said during the first day she has a lot of physiological issues and adhd and takes a ton of medication. And a lot of whole other stuff but what I'm trying to say is she's difficult. I've been kind but she's also not being fair. For example during an assignment I submitted I know on cavas the professors has an option to change the directions without notifying the students. So on the submission for our group project it said only one person per group project to submit it. So the day after it says everyone to submit on the group project. So now I'm irritated because it says one thing and says another the following day. I brought this up to her she changed my grade but it irritated me. Also I was on the page for our class last week and there was no HW. Then 10 mins before class starts it says there's homework due in 10 minutes. Like do I have to screenshot every assignment from now on to prove it says something otherwise and don't get missing assignments or do I have to screen record my canvas to show the assignment did not pop up and only popped up 10 mins before class. I was on canvas all day to so I would know if the assignment was due that day. For the HW she said it would still be counted late...which is crazy and on canvas it shows the highest and lowest grade is 0. On top of that she replied on the weekend when I sent the email on Wednesday.
