Best way to create vocab spread sheets?

Hey y’all! I have a study question for you. When reading, I like to write down every word i don’t know and then later look up its definition and joy that down too to build a dictionary of the words im learning. My current process for this is incredibly time consuming and unrealistic for keeping up with my studies. What methods and programs would be best for creating an alphabetized dictionary? I want the words to automatically be alphabetized based on the Spanish word not thr English translation and not just something that alphabetizes at the end but something that does it as I add new words. Sorry if I explained this poorly, lmk if further clarification is needed.
